Rich and chewy raspberry caramel candy to individually wrap or use in other candy making. This is an easy to follow recipe that turns out the perfect raspberry chewy.

Ingredients

150 gr EVEN Fresh UHT Cream 35%, WHIPPING CREAM

300 gr Sugar

25 gr Glucose Syrup 60 D.E.

25 gr CapFruit Individually Quick Frozen (IQF) Fruit RASPBERRY WILLAMETTE

200 gr CapFruit Frozen Fruit Puree RASPBERRY no added sugar

85 gr Salted Butter 84% fat.
Directions
Preparation
Bring the cream, sugar and glucose to a boil.
Add the CapFruit Individually Quick Frozen (IQF) Fruit RASPBERRY WILLAMETTE to the CapFruit Frozen Fruit Puree RASPBERRY no added sugar and mix together.
Tip the fruit into the cream mix and cook together at 122°C / 252°F.
Add the salted butter and blend well
Pour into a frame
Cut in pieces after letting it set (24hrs approx.)
