150g (¾ cup) granulated sugar

120ml (½ cup) Capfruit Lemon juice and pulp Frozen Fruit Puree No Added Sugar

1 tbsp Capfruit Lemon Frozen Fruit'Zest

120ml (½ cup) Even Fresh UHT Whipping Cream 35% Fat

1 tbsp corn-starch
-
50g (3.5 tbsp) unsalted butter

EBP Frozen Vanilla Round tart shells coated with butter

For the Lemon Filling
You Will Need

Lemon Filling
In a saucepan, whisk egg yolks, sugar, corn-starch, and lemon zest.
Add lemon juice and cream, whisking constantly over medium heat until thickened.
Remove from heat, whisk in butter until smooth.
Assembly
Pipe the Lemon Filling into the cooled EBP tart shell, smoothing the top.
- Refrigerate for at least 2 hours until set.
