Dark chocolate crème brûlée
Heat the chocolate and cream together.
Beat the eggs and sugar along with the chocolate mixture and heat up to 80°C.
Strain through a fine sieve and pour into small moulds or deep plates.
Leave to cool for 12 hrs.
Finishing And Presentation
Sprinkle with Callebaut Irregular Dark Chocolate Bits MINI ROCKS and a leaf of mint dipped in sugar.
