Brioche bread is a French bread, and a cross between a pastry and bread.
This brioche bread is ultra soft, rich, and buttery! Not only delicious to eat, but easy to make too! Perfect for sandwiches, French toast and just to eat on its own.

500 gr Flour

10 gr Salt

100 gr Sugar

22 gr Fresh Yeast

300 gr Fresh Eggs

150 gr Butter
-
75 gr Egg Yolk
-
75gr Whole Egg

100 gr Fresh Milk

Egg Wash
Directions
Brioche Dough
Mix the flour with the salt, the sugar the yeast and the eggs for 5 min in a mixing bowl or in a dough mixer with a dough hook at first speed.
Leave to rest for 5 min, then follow slap and fold method for 7 mins or mix for 7 min in a dough mixer with a dough hook at second speed.
Slowly add the butter and combine well, scrape the bowl to avoid clumps.
Cover the bowl with a damp cloth and leave it to rest at room temp for 2 hours.
Knock back and leave it to rest for 6 hours in a chiller.
Separate your desired portions and leave it to proof at 25°C for 1 hr. Loaf = 400gr, Roll = 50gr.
Pre heat your oven to 160°C
Brush the dough with the Egg Wash before placing it in the oven.
Bake for 20 minutes.
