Emulsifying agent between a liquid and a fat. Very soluble in aqueous medium, soluble in fat medium at 60ºC.
Origin : Soy.
Function : Emulsifier in water and fat solution.
Perfect for "airs" with a fat base, fruit or dairy. Allergen.
Use : Dissolution in cold water.
Dissolution at 60ºC when using a fat product (i.e., oil).
Technical input : Does not change the texture but gives taste (soy)
Recommended dosage:
3 g to 10 g per L
