Iota Gum Powder is a natural thickening and gelling agent derived from red seaweed. It enhances texture and stability in a variety of food products, including dairy, confectionery, sauces, and dressings. With its soft, elastic gels and excellent freeze-thaw stability, it's a versatile ingredient for creating premium-quality foods.
Origin : Red seaweed.
Function : Gives very smooth and flexible textures.
For a vegan flan, or a vegan pannacotta, appropriate dose would be 5g to 7g per kg.
Used for semi-jellified inserts.
Use : Cold dissolution in the product you want to jellify, then bring to a boil.
Technical input : Jellification starts from 36º/38ºC.
Resistant up to 65ºC once it is jellified.
Thermo-reversible.
Does not allow deep-freezing.
Recommended dosage:
2 g to 7 g per L
