A chocolate truffle is a type of chocolate confectionery, traditionally made with a chocolate ganache centre coated in chocolate. These mouth watering pistachio chocolate truffles are the perfect combination.

Ganache
Semi melt the white chocolate in the micro wave.
Boil the milk, cream, invert sugar and glucose together.
Pour the liquid on the chocolate in 4 parts while mixing well with a rubber spatula between each pour.
Chop the butter in small pieces and add it to the ganache when it reaches 35°C along with the the pistachio paste and blend well.
Leave it cool down to 25°C and then pipe the ganache inside the Mona Lisa white truffle shell
Keep it to rest for a few hours at room temperature so the ganache can set.
Chop up some roasted pistachios.
Dip the truffle in the white chocolate temper and roll it onto the chopped pistachio.
